The role of Sous Chef will be based at our Mayfield village in Watford. Mayfield Watford is part of a buzzing residential neighbourhood which includes facilities such as a shop, Restaurant / Bar and bistro, leisure club and a beautiful riverside park.
Mayfield villages comprises of owners, who permanently reside on site within their own private homes and who pay a management fee for the upkeep of their properties and access to services on site. In addition the village hosts external customers and this role is responsible for providing a first class, positive experience for all.
The Role
Reporting into the Head Chef you will have accountability for assisting them in the delivery of exceptional dining experiences to the owners and public customers of our Food and beverage offering.
You will work closely with our talented head chef and manage the kitchen in their absence. If you are looking for a step up in your career to develop your skills, then we can provide relevant training, development and support to allow for further growth through our Mayfield Academy. From involvement with budgets, to ordering stock, and kitchen management we will help you to develop your career as a successful chef.
You’ll also work closely with the other departments to deliver cooking experiences outside of the kitchen to our owners, but also attend events as part of the marketing strategy for the Site.
Responsibilities:
* Playing an active role in service and carrying out all duties directed by the Head Chef with regards to the preparation of all meals.
* Maintaining the highest standard of food hygiene practice.
* Liaising with Owners and Customers and continuing to assist the Head Chef in developing the menu whilst paying attention to their nutritional needs.
* Working with the team at Mayfield to create unique events for our owners, perhaps around national days, seasonality or local events.
* Helping to oversee the work of the Commis chef and Chef De Partie.
* Ensuring excellent quality of food, portion control and preparation.
* Organising kitchen stock and ingredients.
Skills and Experience:
* Previous experience in a similar role in a fast paced environment.
* Ability to demonstrate a wide range of cooking techniques and skills that the team can learn from.
* Chefs qualification preferable
* Qualified to Food Hygiene Level 2
* Knowledge of special dietary requirements
* Practical experience in all kitchen areas
* Good communication skills, both written and verbal
* Understanding of the COSHH policy
* Previous experience cooking for people with strict dietary requirements would be desirable
* Ability to work unsupervised and in a multi-discipline team
* Previous experience of working with a team and developing and coaching them to use new techniques and skills in order to create delicious dishes for our customers
* Knowledge and experience of effective training techniques
