Job Title: Senior Sous Chef
Salary:£39,000 - £42,500 depending on experience

Purpose:
Support the Head Chef in food preparation and service, ensuring the highest standards at all times.
Key Responsibilities:
* Lead shifts and supervise staff in the absence of the Sous Chef, maintaining top-quality service for Fellows, College guests, students, and staff.
* Deputise for the Head Chef when needed.
* Assist in supervising the Sous Chefs and manage kitchen resources efficiently, minimizing costs and energy usage.
* Follow Food Safety and Health & Safety regulations.
* Collaborate with the Head Chef to compile and submit food orders, ensuring proper stock rotation.
Food Preparation & Menu Planning:
* Assist with planning and developing cyclic menus.
* Contribute to the creation of signature dishes for functions.
* Promote the use of fresh produce and ensure dishes meet agreed recipes.
Food Service:
* Ensure excellent customer satisfaction in food preparation and service.
* Oversee food service areas, ensuring proper staffing, preparation, and presentation.
* Brief food service staff on menu content and allergens before service.
* Conduct regular checks during meals for availability, cleanliness, and presentation.
Staff Development:
* Work with the Head Chef to develop training plans for kitchen staff.
* Provide on-the-job training and develop staff to competition standards.
Other Duties:
* Support staff induction and complete progress reviews during probation.
* Record staff sickness and conduct appraisals as directed by the Head Chef.
* Assist with other duties as required by the Director of Hospitality and Head Chef.
Person Specification:
Qualifications:
* NVQ Level 2 & 3 in Professional Cookery
* Basic Food Hygiene Certificate
* Training in HACCP and COSHH
Skills & Experience:
* Strong leadership, organizational, communication, and customer service skills.
* Minimum 3 years in a similar role with HACCP knowledge.
* Experience in a College environment (desirable).

Conditions:
* Must be able to work weekends and overtime as required.
