What you’ll be doing our newly appointed Sous Chef
To exceed guest’s expectation, and provide Marriott high service, by ensuring that the guest receives a pleasant and memorable dining experience.
To support the Executive Sous Chef in the daily running and supervision of the kitchen operation and to in providing an effective and professional service in all food outlets for external and internal customers.
CANDIDATE PROFILE
1. Solid experience in kitchen operation required
2. Able to demonstrate competent technique and cooking skills relevant to experience
3. Ability to work under pressure in a very busy kitchen
4. Can demonstrate good supervisory and man management skills
5. Able to demonstrate passion, enthusiasm and reliability
6. Capable of maintaining and supervising the hotels food quality standards
7. Has a sound understanding of food safety standards and HACCP
8. Has knowledge and understanding of high-volume catering
9. Strong Communication skills (verbal, listening, writing)
10. Pro-active and reliable
11. Able to work alone and within a team
12. Skills and Knowledge
13. Education or Certification
14. Good level of English essential
15. NVQ Levels one and two desired
16. Minimum level two food safety qualification
SPECIFIC DUTIES
The following are specific responsibilities and contributions critical to the successful performance of the position. This job description sets out the current duties of the job role that may vary from time to time without changing the general character of the job or the level of responsibility entailed. Working hours may vary – as required to complete assigned tasks but normally not less than 40h per week.
17. Represents the food production area on a day to day basis and ensures that standards of food taste and presentation are what the Chef requires
18. In the absence of the Executive Sous and Senior Sous chef scheduling of all kitchen associates to ensure proper coverage at all times.
19. To check staff schedules on weekly basis to ensure proper coverage at all times and to keep the wage cost under control.
20. Maintenance of required items in storage, while keeping in mind goals for days on hand inventory levels.
21. Supports procedures for food and Beverage portion and wastage controls.
22. Maintains that the standard operating procedures are followed in all areas.
23. Sees that company policies are in effect regarding:
24. “Clean as you go”
25. Purchasing procedures and Rotation of stocks in stores
26. Month ending inventories
27. Safety training on food handling equipment and accident reports are written
28. Pay-roll procedures and time cards are monitored and followed to include management only authorisation of overtime
29. Requisition system in effect for storeroom areas particularly staff feeding and catering
30. Recipe cards developed, followed and used for all items in conjunction with use records
31. Updating of use records
32. Follow up on production charts to insure no over production or waste
33. Follow up on steak and roast meat charts to tie in with restaurant menu counts
34. Training of subordinate staff, on the following, to meet training objective goals
35. Food production standards – recipe cards, use records (station guides)
36. Proper use of heavy duty equipment
37. Cleaning schedule
38. To perform other related tasks as assigned by management
39. To comply with Marriott International Hotels Limited Regional Office policies and procedures
