Salary package: £41,200 plus tronc // Hotel discounts // Health cash back plan // Meals on duty // Pension scheme // Loyalty rewards and referral bonuses // many more Sous Chef Mission: Together with the Head Chef and the Senior Sous Chef, responsible for the implementation of centralized kitchen procedures, ensuring compliance with company standards, adapting operations to the hotel team, maintaining product and service quality levels and complying with HACCP requirements (Hazard Analysis and Critical Control Points) and company sustainability commitments. Responsibilities will include, but are not limited to: · Monitor service, Food & Beverage quality and presentation standards in all outlets. Work with the Outlet Managers to achieve the requirements as outlined by the clients and hotel standards. · Assist executive chef to establish and implement performance standards for the entire Kitchen team. · Be periodically, as dictated by rota, available in the loading bay to receive goods and inspect quality, quantity and that what was ordered was delivered. · Continuously seek ways to assist the Outlet management maximize their revenues and profits through Food and Beverage products. · Monitor and analyze the activities and trends of competitive restaurants, bars and other hotel’s banqueting departments. · Responsible for costing of all menus in all departments, to ensure items sold are correct to achieve budgeted food cost. · Assist in the training of employees, making sure that they have the skills necessary to · Ensure the reduction of food waste.
