Job overview
To work in close liaison with the Catering Department’s Management Team to ensure Sustenation Production Unit delivers a high quality, cost effective and efficient service for both patients and retail customers.
Responsible for managing a catering team working within the Production Unit.
Adhere to HACCP and Food Safety Legislation according with cook to chill/freeze systems and cook/serve systems.
Responsibility for ensuring high standards of Hygiene and Health & Safety procedures are followed within the department.
Main duties of the job
1. In conjunction with the Catering Management Team provide effective leadership to ensure a consistently responsive and efficient catering service, maintaining team morale and encouraging a team spirit and ‘can do’ attitude.
2. Co-ordinate with the management team to ensure that adequate staffing levels are maintained, ensuring the allocation of staff duties always meets the needs of the service and work specifications.
3. To provide staff with supervision, direction and support.
4. To ensure standards of hygiene and work practices are adhered to within all areas of the department in accordance with Trust Policies and Procedures, including the completion of department documentation.
5. To take an active role in maintaining and improving the quality of the Catering Service.
6. Be actively involved in product development.
7. To Plan and organise the Weekly Production plan of the unit.
8. Successfully time manage and prioritize areas of responsibility.
9. To conduct annual Personal Development Reviews with the catering team.
10. Ensure compliance with the Catering Department HACCP policy.
11. To monitor sickness and absenteeism, update departmental records and to conduct return to work interviews with staff.
12. To be responsible for the reporting of equipment faults and keep a record of all repairs.
13. To accompany internal and external visitors during any visits or audits.

Person specification
Qualifications
* City and Guilds 7061/2, NVQ3 Craft, NVQ3 Catering and Hospitality or equivalent
* Intermediate/Level 3 Food Safety
Experience
* Catering experience within a large organisation.
* Experience of working and implementing food safety management systems.
* Previous experience in healthcare catering.
* Experience of cook freeze catering.
* Experience of producing specialists diets.
Skills
* Knowledge of Health & Safety, Manual Handling and COSHH.
