We are writing a new and
exciting chapter in the history of The Belfry. A major expansion and renovation
project has begun at our resort, due for completion in Autumn 2025. With a
substantial investment in excess of £80 million, we are enriching our resort
including the addition of a new event space, The Masters Suite, 149 extra
bedrooms, a state-of-the-art leisure club, and much more.

Sam’s Clubhouse
Overlooking our stunning PGA
golf course, our high-volume sports bar, Sam’s Clubhouse, is the perfect place
to relax after a day’s golfing. This bar is busy all day, serving breakfast,
lunch and dinner.
The menu in Sam’s Club House is
a mixture of clubhouse classics and Belfry touches from sharing boards,
burgers, and buckets of wings to wraps, pies and catch of the day… In summer
season the outside patio and bar opens and can provide dining options for up to
250 guests at any time and approximately 500 covers per day.
Salary
The on target earning potential
for this role is £38,025 annual salary, compromising of a base salary of
£35,279 plus a qualified estimate of £2,746 gratuities per annum
About the role
As Sous Chef within Sam’s
Clubhouse kitchen your day will be focused on ensuring the kitchen brigade are
working towards producing the Sam’s menu to a very high, consistent
standard.
You will also be responsible
for:
* Understanding the importance of
allergens and dietary safety within your kitchen
* Running a safe and compliant kitchen
* All temperature logging for hot items and
refrigerators to ensure full compliance
* Running of the kitchen throughout a busy
service and providing support to your team to ensure a fast and accurate
delivery.
* Clearing and cleaning of your section and
other areas of the kitchen to ensure we remain compliant
* Ordering stock, implement specials menu
ideas
* Management, training and development
* Deputising for the Head Chef
About you
The ideal candidate should have
experience in a fast-paced kitchen at Sous Chef level or above and possess
excellent communication and presentation skills.
In addition, you will be:
* An inspirational leader, a quick thinker
and a brilliant communicator
* Passionate about quality food and working
with seasonal ingredients
* Standards-driven, with a fantastic eye
for detail
* Experienced in taking ownership over your
section and working towards guidelines of portion control including
weights and measurements and logging all wastage for more accurate GP %
* Able to develop strong relationships with
your team, and colleagues
* Proficient in understanding of COSHH and
HACCP on food storage.
