This is an excellent opportunity to put your stamp on a new Food offering in the Chilterns. We are aiming high.
The Black Cat is an 18th century public house and garden which has fallen into a state of disrepair after 5 years unoccupied. The new leaseholder DSG Enterprises are embarking on a journey to rejuvenate and breath a new lease of life into this once unloved site, creating a destination dining room and community public house under one roof.
This is not a project for the faint hearted. You will work closely with the owner and General Manager to develop the site and a loyal customer base. The bones of the business will be constantly under repair and growth, and we want you to be a part of shaping the future.
Key to this role is ensuring that our food offering in the pub and dining room is of an outstanding quality across all menus and functions, despite operational challenges. You will find yourself fully immersed in all aspects of the project, whether that is normal day to day service in the pub/dining room or getting stuck into facilities and refurbishment duties, all whilst considering the impact of all activities on the wider business.
With exacting standards as a benchmark, DSG aim to build a collection of unique sites, and we are looking for talented support to build the business. With top tier support from the Owner and General Manager, the key to succeeding in this role is serving excellent food, every time. Person Specification: Essential Skills and Attributes:
* Solid experience managing a high-quality Kitchen at Head chef or Sous chef level
* Sound grasp of modern British/European/Latin American cooking styles and techniques
* Experience with new openings is a bonus
* Adaptable and creative to use the tools and facilities available to create and deliver high quality menus
* Happy to get stuck into all areas, of the role. We are a new business and are building turnover and team simultaneously
* Must have a valid driving licence and access to own vehicle due to location
* Unrestricted right to work in the UK
Key Tasks and Responsibilities:
* Take charge of all food procurement and supplier relationships
* Ensure the preparation and service of quality culinary dishes for our Bar, dining room and events programme
* Manage the day to day operation of the kitchen and all kitchen staff
* Be a point of contact to the owner and General Manager
* Approve all foods before they leave the kitchen
* Forecast supply needs and estimate costs
* Recruit kitchen staff in line with set budget requirements and turnover
* Ensure efficiency of the kitchen and staff.
* Ensure productionquality and consistency of food offering
* Menu development and recipe creation in line with expected standards
* Manage the kitchen budgets relation to staff and purchasing
* Ensure that the kitchen(s) meets all necessary standards and regulations
* Carry out all due diligence as necessary for safe operation of the kitchen and wider areas
* Where necessary conduct and intermittently review risk assessments.
* Manage and take responsibility for other permanent or temporary kitchen staff members
* Maximize the productivity of the kitchen staff
* Ensure proper equipment maintenance and operations
* Oversee special catering events and where necessary offer culinary instruction and demonstrate techniques
* Supervise kitchen personnel and their performance
* Manage food stock, ordering and monitoring yield and wastage to achieve agreed gross margins
* Organise duty roster for kitchen staff ensuring all sections are covered when required, within budget
* Manage holiday requirements ensuring that the kitchen is always manned.
* Report to the General Manager.
* Any other duties requested by the owner or General Manager
Conditions of Work:
* Permanent contract
* Hours of work: Variable contract, 48 hours a week with flexible schedule 5 out of 7. (Opening hours are yet to be determined)
* Probation period: 6 months
* Notice period: 1 months in writing on either side following successful probationary period.
