Are you ready to step into a leadership role in the kitchen? The Mercure Nottingham Sherwood Hotel is seeking a talented individual to become our next Head Chef!
Key Responsibilities:
• As Head Chef you will be responsible for overseeing and developing a smooth operation of a busy kitchen.
• Ensure HACCP compliance within the kitchen and Food & Beverage outlet.
• Ensure the kitchen equipment is in working order; report any maintenance issues.
• Training and development of junior members of the kitchen team to and the supervision of the kitchen
• Assist in positive outcomes from guest queries in a timely and efficient manner
• Ensure food products are of a good quality and stored correctly
• Ensure the consistent production of high-quality food
• Ensure resources support the business needs through the effective management of working rotations
• Support brand standards through the training and assessment of the Team
• Control costs without compromising standards, improving gross profit margins and other departmental and financial targets
• Assist other departments wherever necessary and maintain good working relationships
• Comply with hotel security, fire regulations and all health and safety and food safety legislation

* Proven experience as a Head Chef or in a similar senior culinary role
* Strong leadership skills with the ability to motivate and mentor kitchen staff
* Proficient in menu planning, cost control, and inventory management
* In-depth knowledge of food safety regulations and HACCP principles
* Creativity in developing new dishes and presenting food
* Ability to work under pressure in a fast-paced environment
* Flexibility to work varying shifts, including evenings, weekends, and holidays
