Sodexo Live! is looking for a talented Sous Chef with a passion for culinary excellence and innovation to join our team at the Nottingham Forrest Football Club..
Working with the Executive Head Chef and Head Chef you will drive the venues culinary delivery, ensuring our client’s expectations are always exceeded.
Your responsibilities will include developing food offer strategies aligned with consumer needs and market trends as well as driving innovation, whilst ensuring food safety compliance.
You will be involved in creating, testing, and presenting exciting menu designs at client tastings and you will be able to speak passionately about each dish.
You will ensure that the venue remains ahead of the market in understanding and delivering creative and relevant innovation.
You will be a creative and collaborative sous chef who can work with the organisation across departments, including marketing and operations to ensure the delivery of a first-class customer service.

MAIN RESPONSIBILITIES
* Delivery of consistent levels of service, within the Company's standards, to support contract specifications, service offer and agreed performance, qualitative and financial targets
* Compliance to company and statutory regulations relating to safe systems of work, health and safety, hygiene, cleanliness, fire and COSHH
* Development of supplier relationships to support the business strategy
* Development and succession planning of culinary talent
* Specifically to ensure that the venue remains ahead of the market in understanding and delivering creative and relevant innovation
* Present each menu design at relevant client tastings and be able to speak passionately about each dish
* Working with internal departments such as Marketing and Operations to define the offers that the business requires
THE IDEAL CANDIDATE
You will be a proactive and empowered Chef with a creative approach to food and a passion for delivering exceptional experiences. It is essential that you have experience of working in a high-volume, large venues, catering for major events or large scale banqueting operations. You also must be available to work 5 days over 7 which will include some evenings and weekends.
You will also have:
* A Fine dining background gained in hotels, restaurants or contract catering
* Excellent communication skills
* The ability to build strong working relationships
* Financial awareness and understanding of a food profit and loss account and articulate how to control food cost and generate positive food margin
* Level 3 Food Hygiene qualification (can be taken in-house)
