Job Description
Are you a passionate foodie who is not afraid of thinking outside the box? Ready for a sizzling career move? You will play a pivotal role in our kitchen working alongside a fantastic team. The food you prepare, cook and serve makes our guests smile and want more.
What you will be doing:
1. Under the general guidance and supervision of the Sous Chef, assist in directing and controlling the whole food production.
2. Actively share ideas, opinions and suggestions to improve the environment and menus.
3. Ensure consistency in the preparation of all food items for a la carte and/or buffet menus according to property recipes and standards.
4. Communicate effectively with the rest of the team and strive for guest feedback.
5. Assist in development and implementing standards, recipes, portion sizes, and costing.
6. Assist within the kitchen operation, daily market lists, and inter-kitchen transfers as required and submit to the Executive Chef. Check and taste all buffet, displays, and banqueting set-ups in accordance with the Executive Chef’s specifications and take action if discrepancies are seen immediately.
7. During peak hours, i.e., lunch and dinner, be stationed at the outlet kitchen or buffet to ensure food is served according to the Executive Chef’s specifications.
8. Guide the Culinary Team to prepare food according to standardized recipes and specifications to maintain consistency and ensure all Sofitel quality standards and food cost standards are met.
9. Ensure food waste is kept to a minimum through proper rotation, labeling, and storing of food.
10. Adhere to Food Safety guidelines ensuring that all food products are handled, stored, prepared, and served safely.
11. Ensure that the kitchen work area is clean, organized, and that the equipment is functional.
12. Promote teamwork and morale within the kitchen and with all other departments.
Qualifications
Experience and skills include:
1. 4-6 years cooking experience including high-end high volume luxury hotel.
2. At least 2 years in the same position in luxury hotels.
3. Food Safety Certificate or Recognized International Equivalent.
4. Must have experience and be proficient in both a la carte and production cooking.
5. Excellent interpersonal and communication skills.
6. Must be an effective supervisor, trainer, administrator, and team player with strong leadership and organizational skills.
7. Must be innovative, detail-oriented, and quality conscious.
