As a Junior Sous Chef Breakfast Chef, you will take a leading role in shaping and delivering a beautiful breakfast offering that combines elegance, simplicity, and quality. From preparing freshly made classics to overseeing modern la carte breakfast items, youll bring creativity, precision, and energy to the start of each day. You'll work closely with the Chef Partner, Head Chef and wider kitchen team to ensure the breakfast service runs smoothly, upholding our commitment to excellence from the first plate to the last.
Key Responsibilities
Breakfast Service Leadership
* Oversee all aspects of breakfast preparation and service, ensuring exceptional standards in quality, flavour, and presentation.
* Lead the team during morning shifts, ensuring efficiency and calm under pressure.
* Coordinate MEP and manage timely execution of all breakfast menu items.
Menu Development
* Contribute ideas for seasonal and innovative breakfast dishes, reflecting the restaurants culinary vision.
* Collaborate with the Chef Partner and Head Chef to refine recipes and introduce signature morning items.
* Maintain a balance between timeless breakfast classics and creative new offerings.
Quality & Consistency
* Champion consistency across all dishes through regular tasting, training, and feedback.
* Uphold standards of portion control, garnishing, and plating for every item leaving the pass.
* Monitor guest feedback and make adjustments where needed to enhance the breakfast experience.
Team Leadership & Mentorship
* Support and inspire junior team members, fostering a positive and collaborative morning shift culture.
* Provide on-the-job training for breakfast preparation techniques and standards.
* Act as a role model for punctuality, cleanliness, and professionalism.
Health & Safety Compliance
* Adhere to all food hygiene and safety regulations, maintaining a clean and organised kitchen environment.
* Conduct opening kitchen checks and ensure proper documentation of food safety protocols.
Operational & Financial Awareness
* Work with the senior team to manage stock rotation, reduce waste, and maintain cost-effective operations.
* Ensure all kitchen equipment used for breakfast is well maintained and report issues promptly.

Qualifications & Experience
* Proven experience in a breakfast chef or junior sous role within a high-quality kitchen or restaurant environment.
* Formal culinary training or relevant hospitality qualifications.
