Scope andObjectives
This positionis responsible for training the juniors at the appointed section inpreparing & delivering consistently highquality food.Observing all standards as set by the hotel and regulated by localauthorities ensuring all hygiene cost controls systems are followedandmaintained.

PrimaryResponsibilities
* Preparationof food cooking quality control cutting &HACCP
* Maintain daily misenplace (MEP) andprepare ingredients
* Lead by example inspect& clean food preparation areas ensure safe personal hygiene& sanitary foodhandling practices HACCP labelling &FIFO/FEFO practices hygienic handling & storage ofequipment & utensils
* Check the tastetemperature & visual appeal of food items prepared toensure that the quality & portion are consistent &as per specifications set out
* Ensure thehighest standards and consistent quality in the dailypreparation
* Provides guidance &training to junior kitchen staff members including but not limitedto line cooking food preparation & dishplating
* Strict adherence topurchasing procedures
* Keep up to date with thenew products recipes and preparationtechniques
* Have full knowledge of all menuitems daily highlights &promotions
* Adhere to recipes and stockmanagement
* Ensure that all safety healthsecurity and loss control policies and procedures and Governmentlegislation are adheredto
OtherResponsibilities
* Bewell versed in hotel fire & life safety/emergencyprocedures
* Apply necessary precautions withregards to the hotel food safety & hygiene standards(HACCP)
* Attend all briefings meetings andtrainings as assigned by management
* Maintain ahigh standard of personal appearance and hygiene at alltimes
* Perform other reasonable duties assignedby the assigned by the Management
* Establishingand maintaining effective interdepartmental workingrelationships
* Actively share ideas opinions& suggestions
