Job Description:
As an Authentic Nigerian Cuisine Chef, you will play a vital role in planning menus, preparing, and overseeing the preparation of food. Your responsibilities will include:
• Planning and designing menu offerings that highlight authentic Nigerian flavours’ and techniques.
• Preparing, seasoning, and cooking a variety of traditional Nigerian dishes, while ensuring the highest quality of finished dishes.
• Requisitioning and purchasing foodstuffs from suppliers, examining the quality to maintain our high standards.
• Supervising, organizing, and instructing kitchen staff, managing the entire kitchen or specific areas to ensure efficient operations.
• Ensuring hygiene and health and safety standards are strictly maintained within the kitchen environment.
• Planning and coordinating kitchen work activities including the fetching, clearing, and cleaning of equipment and utensils.
• Managing stock control and procuring authentic Nigerian ingredients, such as palm oil, crayfish, and spices, to ensure a consistent supply.
• Upholding high food safety standards by following relevant regulations, managing allergens, and ensuring proper sanitization of surfaces and kitchen equipment.
• Developing and implementing cleaning schedules to maintain a pristine kitchen environment.
• Contributing to the restaurant's COVID-secure status by adhering to current health and safety protocols.
Requirements:
• Minimum of three years of experience in a Nigerian or African cuisine-focused kitchen.
• Expertise in preparing traditional Nigerian dishes such as Ofada, Gbegiri, Ewedu, Ayamashe, Efo Riro, Edikaikong, Ogbono, Pepper Soup, Egusi, Ewa Agonyin, Garnished Pomo, Asun, and other Nigerian cuisine, and authentic Nigerian Jollof Rice.
• Proficiency in high-volume food preparation and kitchen management.
• Strong knowledge of food safety regulations and HACCP principles (Level3 certification or working towards it).
• Ability to inspire and motivate a kitchen team, fostering efficiency and collaboration.
• A genuine passion for delivering top-quality food and an understanding of the cultural significance of Nigerian cuisine.
Skills and Requirements:
• Expert in Nigerian cuisine Food preparation is a must
• Inventory control and management skill
• Knowledge of nutrition and attention to detail
• Ability to manage time and be creative in the kitchen
• Ability to multitask in the kitchen
• Passion, motivation and willingness to learn
• Knowledge of food hygiene, health and safety standards
• ability to supervises, organises and instructs kitchen staff and manages the whole kitchen or an area of the kitchen;
