Job Description:
An exceptional opportunity presents itself for a Chef de Partie to join the Food & Beverage Department at Raffles London at the OWO.
Reporting into the Executive Chef, you will assist Sous Chefs in the preparation and service of food, ensuring that the highest standards are always maintained and that the kitchen areas designated, equipment, and utensils are always kept clean & tidy to the standards required by the Hotel.
Responsibilities:
* Using scales, timers, and probes to achieve consistency in your work.
* Following the methods and recipes as outlined in communication.
* Being environmentally conscious and working towards a low waste operation.
* Maintaining and running your section.
* Correcting stock rotation of food and ordering levels via correct channels.
* Involvement in the production and development of dishes for all outlets, setting standards.
* Ensuring that the rotas are managed fairly to meet guest/business needs.
* Arranging and attending monthly communication meetings.
* Holding nightly briefings with the sous chef.
* Providing regular feedback to employees on their performance.
* Maintaining and running the kitchen in the sous chef's absence.
* Maintaining discipline in the department.
* Monitoring the training of all junior kitchen staff and assessing their progress.
* Ensuring correct storage and labeling of foodstuffs, equipment, and dry goods in all kitchen areas.
* Additional responsibilities in the absence of a line manager or senior employee.
* Performing other duties as assigned, including working in different departments or restaurants.
* Explaining services to guests, visitors, and employees.
* Responding promptly to the service needs of guests, employees, and visitors.
* Assisting new colleagues in becoming familiar with the workplace.

* Previous relevant experience as Chef de Partie or high-performing Demi Chef de Partie.
