The Chancery Rosewood – opening Summer 2025, is redefining luxury in Mayfair, housed in the former U.S. Embassy and reimagined by Sir David Chipperfield. With 144 suites by Joseph Dirand and a collection of dynamic dining and bar spaces, it’s a place where experiences are curated, conversations flow, and every detail matters.
We are looking for a Head Baker to lead our bakery team, with expertise, innovation, and an uncompromising approach to quality. You’ll oversee every aspect of dough preparation, fermentation, and baking, ensuring that each loaf, pastry, and baked good reflects the finest ingredients and techniques.
Key Responsibilities:
1. Lead the bakery team, ensuring smooth operations and consistent excellence.
2. Develop and refine bread and viennoiserie menus, balancing tradition with innovation.
3. Oversee all aspects of dough preparation, fermentation, shaping, and baking.
4. Maintain strict quality control, ensuring flavour, texture, and presentation meet five-star standards.
5. Manage ingredient sourcing, stock control, and waste reduction, ensuring efficiency and sustainability.
About You:
1. Experience as a Head Baker or Senior Baker in a high-end bakery, hotel, or restaurant.
2. A deep understanding of artisanal baking techniques.
3. Passionate about craftsmanship, precision, and using the best ingredients.
4. A natural leader with strong training and team development skills.
5. Organised, detail-focused, and able to thrive in a fast-paced environment.
