Job Introduction
We are seeking an experienced and highly skilled Second Chef to join our team at St. Omer Barracks in Aldershot, working in a fast-paced and rewarding military environment. As Second Chef, you will be responsible for assisting the Head Chef in the preparation and delivery of high-quality meals for military personnel, ensuring that all food is nutritious, well-prepared, and presented to the highest standards. You will oversee kitchen operations in the absence of the Head Chef, supervise junior kitchen staff, and ensure strict adherence to health and safety regulations. The ideal candidate will have significant experience as a Second Chef or in a similar senior kitchen role, with a strong knowledge of food safety, preparation, and kitchen management. The ability to work well in a team, under pressure, and to military standards is essential.
What you’ll do:
* Lead the kitchen in the absence of your senior colleagues & provide support for the production team
* Direct the preparation/duties to the commis chefs, chef de parties, and other kitchen staff.
* Assisting/sharing in ordering, prep, stock control, and running service & cleandown.
* Ensuring strict adherence to all EHO guidelines and systems
* improvisation and maximise the use of existing stocks where necessary.
* Working with the FOH team to drive the service excellence
* Work on the range with the kitchen team to train, guide & develop
* Monitor sanitation practices to ensure that employees follow standards and regulations
* Prepare, produce and present food to the highest standard
What you bring:
* NVQ lv 2/3 or experience working in a busy kitchen environment
* Basic IT skills, with Microsoft packages experience
* Experience in menu planning and production
* Exposure to bulk cooking
* The enthusiasm to develop and learn new skills.
* A positive and approachable manner
