Executive Chef Position Overview
The Executive Chef plays a pivotal role in the success of the hotel by driving the creation and execution of an innovative, local and guest-centric food strategy. This leadership position is responsible for fostering a positive and collaborative kitchen environment while maximizing operational efficiency, ensuring product consistency, and upholding exceptional guest service standards.
Key Responsibilities
* Culinary Leadership: Oversee all food operations, ensuring excellence in culinary delivery for all functions.
* Menu Innovation: Design, develop, and price menus that are creative, cost-effective, and aligned with guest expectations and market trends.
* Standards and Consistency: Maintain a comprehensive menu syllabus and ensure consistent execution of food preparation and service standards.
* Inventory and Cost Management: Secure and manage kitchen stock, monitor inventory levels, and minimize waste to achieve optimal food cost margins.
* Team Development: Recruit, train, mentor, and inspire a team of culinary professionals to deliver outstanding results and achieve business objectives.
* Training and Safety: Train team members in safe food handling and workplace safety practices while ensuring the security of the property, team, and guests.
* Operational Efficiency: Develop accurate forecasts and budgets, manage labor costs, and schedule staff effectively to maintain appropriate staffing levels.
* Product Quality: Inspect and maintain high standards for food presentation, buffet setups, and service delivery to meet the hotel’s standards.
* Additional Duties: Perform other responsibilities as required to support the success of the hotel.
Qualifications and Skills
* Experience: At least 5 years of culinary leadership in a comparable hotel environment with a strong catering background.
* Certifications: Red Seal Chef certification and Food Safe Levels 1 & 2 required. Hepatitis A vaccination recommended.
* Unionized Environment: Experience leading in a unionized setting is an asset.
* Culinary Creativity: Demonstrated ability to craft innovative menus and recipes that delight guests.
* Technical Skills: Proficient in Microsoft Office Suite; experience with Squirrel POS and Dayforce is an asset.
* Leadership and Communication: Strong skills in leadership, conflict resolution, problem-solving, and both oral and written communication.
* Team Player: Self-motivated with excellent organizational and interpersonal skills.
* Customer Service Excellence: A commitment to superior internal and external guest experiences.
* Physical Demands: Ability to meet physical requirements, including standing for extended periods, lifting up to 30 lbs, and bending.
