This is a rural family-run business seeking a Pub and Restaurant Head Chef. We have thrived by exceeding client expectations and are looking for an enthusiastic individual to manage our busy kitchen and develop the team. The candidate should understand rural communities and lifestyles to cater effectively to our market.
Over the first 12 months, the candidate will review and improve current operations, with potential for progression as the business develops its hospitality side.
The ideal candidate must be able to problem-solve, build relationships, and maintain a positive, proactive approach to daily operations.

Responsibilities include menu development, seasonal innovation, training, quality control, managing labour and food costs, with a focus on fostering a supportive and inclusive culture and developing the team.
Main purpose of the role:
To manage all kitchen operations at a vibrant rural restaurant and bar with high seasonal demands.
Key Responsibilities:
1. Staff Management: Recruiting, training, and managing the kitchen team.
2. Compliance & EHO: Maintain and improve current 5-star ratings.
3. Menu Management: Draft seasonal menus using local produce with weekly specials.
4. Finance: Achieve a target of 70% GP and other financial targets.
5. Waste Management: Minimize waste where possible.
6. Cost Control: Manage orders and supplier relationships for quality and price.
7. Compliance: Work with HR & HSE to meet all requirements.
8. Awards & Nominations: Maintain high standards consistent with previous awards.

Ability to commute/relocate:
Powys - SY16, Wales: Reliable commute or plan to relocate before starting. Temporary live-in accommodation may be considered for the right candidate.
Experience:
Attention to detail, problem-solving, efficiency, teamwork. Minimum 7 years culinary experience, with at least 1 year as Head Chef. Passion for teamwork, quality, growth, good communication, and stability.

* Level 2 Food Hygiene Certificate (required)
* H&S Level 2 (required)
* Allergen awareness training (required)
