MAINRESPONSIBILITIES
Duties
* Prepareand present menu items showing variety and flair within the costmargins specified by the hotel
* Ensure strictstock rotation and minimum wastage. Have stock controlprocedures implemented and maintained.
* Ordernecessary foods according to proposed business demands. Consult with the Executive Chef for guidance and authorisation oforder.
* Liaise with Restaurant employeesregarding the availability of menu items additions to the menu andany relevant changes.
* Works with andcoordinate the work of apprentices in the preparation andproduction of food asrequired.
* Prepare and ensureavailability of mise en place asrequired.
* Keep all working areasclean and tidy. Ensure all equipment is maintainedserviced and cleaned. Report any problems to theExecutive Chef.
* Assist and liaisewith the chef on duty asrequired.
Hygiene/ Personal safety /Environment
* Ensure thatthe workplace remains clean and the safety of consumable goods byalways respecting HACCPregulations
* Respect the instructionsand safety guidelines for the equipmentused
* Apply the hotelssecurity regulations (in case of fireetc)
* Respect the hotels commitmentsto the Environmental Charter (saving energy recycling sorting wasteetc)
CustomerRelations
* Provideefficient friendly and professional service to allguests.
* Lead by example whenattending to guest requests. Show efficiency inconstantly striving to provide Total CustomerSatisfaction.
* Take initiative toensure that interactions with our customers (internal or external)are positive and productive call the Manager on Duty ifdifficulties arise.
* Work togetherwith trust so that colleagues and management meet the goals of thedepartment/Hotel.
* Treat customers andcolleagues from all cultural groups with respect sensitivity andtransparency.
* Take every opportunityto be a salesperson by active selling of special promotions andfacilities available within theHotel.
