ESSENTIAL FUNCTIONS & PHYSICAL REQUIREMENTS
Responsibilities
* HACCAP - To follow the day to day procedures including; Diligence, food labelling, weekly deep clean of your section
* Run an environment that is clean, tidy and organised at all times. Promoting morals that encourage a team to have pride in their working environment and a high level of commitment
* Control, with the assistance of the senior chef's of Coworth Park, all the operating costs within all the food outlets to the agreed budgets set for your section. Including stock control, stock rotation and ordering.
* Plan the day-to-day running of your section effectively to meet the service by the department. This will mean constant training, supervision, and forecasting in line with the hotel's business needs.
* Ensuring that the stock control, stock rotation and ordering for your section is complete to the Executive Chef standards.
* Supervise, train and develop the team to ensure a gradual succession and learning path for everyone by delegating tasks to team members
* Have a flexible ability to respond to business and client needs
* Follow and abide by all regulations, policies and procedures that has been set out by Coworth Park and the Dorchester Collection.
* Help protect the property from theft and damage of goods using good working practice within the kitchens and making sure procedures are followed to prevent this from happening.
* Lead the team as per the company's values and ensure a high level of team morale.
* Suggest new menu and or recipe ideas to the senior chefs in charge.
* Ensure daily food preparation meets recipe and specification index i.e. size, quantity and quality
Health & Safety
* Comply with all statutory and company health and safety, fire, bomb and security regulations
* Ensure job required certificates and Licensing knowledge is kept up to date
* Ensure other team members are also made aware of these requirements and abide by them
Flexibility
* Along with your main duties you may be asked to complete other tasks and duties as and when necessary and reasonably required
* You may on occasion be required to adjust your hours of work to cover the business need
QUAIFICATIONS & DESIRABLES
* NVQ Level 2&3
* COSHH
* 1st Aid
* Previous experience in a similar establishment
* Food, hygiene and safety
* Good verbal and written English
* General kitchen and food knowledge
* Good organisational skills
* Flexible ability to respond to business and client needs
