As the Head Baker & Development Chef you will lead the bakery operation for the group. This is a multi-site role requiring a unique blend of creative innovation, commercial insight, operational excellence, and the ability to inspire and develop a talented team. Please note that we run an overnight operation - the hours are between 9pm-6am.

Creative Development:

Operational Expertise:
* Lead hands-on production across sites, splitting your time across development and operations.
* Manage day-to-day production schedules to meet quality, efficiency, and consistency standards.
* Implement and maintain streamlined workflows across multiple kitchens to ensure operational success.
Commercial Acumen:
* Develop products that balance creativity with profitability.
* Monitor ingredient costs, portion control, and waste management to meet financial targets.
* Collaborate with site managers and the leadership team to tailor offerings that align with customer preferences and business goals.
Training and Team Development:
* Be a hands-on leader who trains, mentors, and inspires a high-performing team.
* Establish clear performance standards and provide ongoing feedback to support professional growth.
* Cultivate a culture of creativity, excellence, and accountability.
Essential Skills & Experience:
* Proven experience in a leadership role within pastry and bakery operations, ideally in a multi-site environment.
* Expert-level skills in viennoiserie production, including laminating, proofing, and baking.
* Proficiency in creating batch production items.
* Strong knowledge of classic and modern pastry techniques, with an eye for presentation and detail.
* Familiarity with production equipment, scheduling, and scaling recipes for consistency.
* Exceptional organizational skills to manage time across development, operations, and training.
