Position Summary:
You are the Captain of the Ship. You are responsible for ensuring consistency of food standards, excellent service, and maintaining the cleanliness and condition of the restaurant. You are accountable for achieving the store’s sales and profit by maintaining ideal costs of all the restaurant’s expenses, including proper preparation of weekly rosters without sacrificing the customer experience. It is your responsibility to keep your team motivated and create a cheerful, professional working environment that will keep our customers wanting to return to German Doner Kebab.
Duties and Responsibilities:
* Oversee and manage all areas of German Doner Kebab Restaurant
* Ensure guest service exceeds company standards and strong guest satisfaction is maintained
* Respond efficiently to guest complaints and take appropriate action to solve problems
* Enforce and ensure the best quality of products possible are served
* Organise and supervise shifts to ensure both team and guest satisfaction
* Be a duty manager on a rotation basis (role shared with supervisors)
* Coordinate the entire operation of the restaurant during scheduled shifts
* Complete all necessary daily reports at the end of each shift
* Manage team welfare and provide regular feedback
* Ensure all employees adhere to company uniform standards
* Organise and supervise the shifts of kitchen, dining, and counter staff
* Meet and greet all customers where possible and role model exceptional customer care
* Encourage teamwork, cooperation, harmony, productivity, and a positive attitude within the working environment
* Maintain high standards of quality control, hygiene, and health and safety
* Train and develop the team through strong, well-organised training and ongoing operational feedback
* Appraise team performance and provide formal feedback to keep them upbeat and productive
* Nurture a positive working environment and lead by example
* Support supervisors and colleagues during peak times and undertake any operational duty that might be reasonably required
* Ensure GDK team are always well-groomed and smart ready for work
* Estimate consumption, forecast requirements, and maintain stock inventory to ensure product availability and minimal product wastage
* Monitor and ensure compliance with food safety and health & safety rules and regulations
* Control costs and minimise waste to ensure profitability of the restaurant
* Successfully promote and publicise the GDK brand
* Analyse and plan restaurant sales levels and profitability
* Organise marketing activities, such as promotional events and discount schemes
* Monitor all restaurant operations and initiate corrective actions
* Lead all financial areas including sales growth, cost management, and profit growth
* Take responsibility for the business performance of the restaurant
* Prepare reports at the end of the shift/week, including team control, food control, and sales
* Create and execute plans for sales, restaurant profit, and staff development
* Set budgets and/or agree them with the franchisee
* Check stock levels and order supplies as needed
* Prepare cash drawers and provide petty cash as required
* Help in any area of the restaurant when circumstances dictate
* Attend any training or meetings as required by German Doner Kebab or the Franchisee
* Perform any other duties as designated by the Franchisee due to business demands
* Ensure the security of the German Doner Kebab Restaurant
* Work with supervisors to coordinate all aspects of stock deliveries and maintain accurate records
* Collaborate with GDK and the Franchisee to ensure monthly accounts are accurate
* Administer and maintain the German Doner Kebab PMC system
* Monitor stock storage areas, ensuring they are secure, neat, and clean
* Ensure tight stock control and budgeted margins are achieved
* Monitor daily ordering to maintain stock levels and ensure timely orders
* Monitor training of restaurant staff, including holding periodic performance reviews
* Lead and comply with maintaining high standards of food quality
* Promote and follow legal responsibilities and requirements associated with the business
* Maintain a local authority food safety certificate (e.g., scores on the doors 5 stars) and ensure compliance with EHO and fire safety officers
* Have a good working knowledge of all equipment and efficiently manage preventative maintenance

Qualifications:
* Proven working experience as a Restaurant General Manager
* Demonstrated experience in customer service management
* Extensive food knowledge
* Computer literacy and familiarity with restaurant management software
* Strong leadership, motivational, and people skills
* Financial management skills
