About the role The Regional Food Development Chef role is to assist and mentor the management and development of all restaurant kitchen Teams in order to provide the required quality of food at a pace consistent with the environment and satisfying the needs of each business, whilst ensuring that company policies, procedures and standards are maintained. To operate in an ‘open’ style with the ability to drive the business from within each restaurant kitchen. At all times the Regional Food Development Chef will need to demonstrate and deploy the 7 key business competencies expected for the effective operation of the role: Business Leadership Managing Ambiguity Decision Making Resource Management Setting Direction Communication & Influence Innovation & Change Commercial Acumen Key responsibilities To assist the Head of Food & Drink Development as required to introduce, deliver and execute the food offering for all brand concepts and or projects To assist and coordinate the development and collation of manuals, guidelines and brand concept materials, whilst ensuring that the content is relevant and up to date with the respective brand To produce and deliver project scope documentation and food menu briefs in a timely manner and as to the business requirements To coordinate between all internal and external stakeholders required to review and sign-off all food and drink decisions and deliverables To coordinate with all restaurant suppliers as required, and to maintain any necessary relationships. To work with the restaurant teams on back of house equipment and operational requirements, ensuring efficient and effect operations in all Brand concepts and restaurants To communicate the TRG Concessions Food Standards policy and uphold the standards the brand adheres and aspires to throughout all restaurants To manage travel costs, whilst adhering to company guidelines To be responsible for food operations handover of the new concept, project or territory to the business support team. This will include the delivery of briefing packs and all other key materials. To attend internal meetings as required and to provide updates on any relevant area of responsibility upon request To enforce and comply with all company policies and procedures which are fundamental in maintaining effective performance, communication and good business reputation To enforce and comply with all statutory legislation and policy i.e. Food Hygiene and Fire, Health & Safety and to attend any training as requested by the company and required by law Required Experience Minimum 18 months of multi-site experience in a food lead environment A full understanding on how to develop and deliver comprehensive business planning and monitoring disciplines A comprehensive working knowledge of Restaurants Back of House operations is essential The Regional Food Development Chef need to be a truly inspirational leader with excellent communication and influencing skills.
