Key Responsibilities
As Head Sommelier, you will understand the workings of a well-managed cellar and demonstrate the highest attention to detail - you will be highly organised.
1. Proven experience as Head Sommelier with a very strong understanding of wine pairing
2. Capable of creating, purchasing and managing a cellar of 300 wines plus
3. Inspire and train staff from your wine knowledge and experience
4. Help with food service, when possible, with the restaurant team
5. Ensure the wine and drinks service is at the highest level
6. Train and develop the staff using the company procedures
7. Deliver wine events and tastings to our customers
8. Oversee and order stock, keeping prices up to date on the EPOS system
9. Help push sales to gain the best possible profit for the restaurant
10. Responsible for H&S, FSA requirements, Allergy Laws and Hygiene ratings
Key Skills, Qualities & Experience
1. Proven experience as Head Sommelier with a very strong understanding of wine pairing
2. A very strong background working ideally as Head Sommelier in a Michelin setting
3. Passionate about delivering the highest levels of service to our guests in an engaging way
4. Perform wine decanting in a professional manner
5. Ability to work under pressure
6. Proven track record in building a notable wine list
7. Qualified to level 3 WSET or CMS
8. Ensure areas are always clean and tidy
9. Deal with customer complaints immediately and effectively
10. Ability to pass your enthusiasm to guests and team members alike
11. Well-presented and well-mannered
