Chef De Partie
Location: 5 Star Hotel in the heart of London
Salary: £33,366 – plus service charge
Hours: 42 hours contracted (Morning and evening shifts)
We are looking for an experienced Chef de Partie to join our team. As a Chef de Partie, you will participate in and supervise the preparation and cooking of all food on your section in accordance with agreed recipes and processes. With access to the best seasonal ingredients and fresh produce, you will create breath-taking hospitality and memorable culinary experiences for our guests. The ideal candidate will have experience in a busy hotel or restaurant kitchen and be in a similar role. The successful applicant will have the knowledge and skills to meet our exacting customer service standards while fulfilling their own career ambitions and, we hope, having fun.
What will you be doing?
* Ensuring all dishes are correctly garnished before being sent to the outlet for service.
* Ensuring correct portion control and plating standards are adhered to.
* Meeting budgeted food costs through good portion control, minimizing waste, and good stock rotation.
* Tasting food on a regular basis to ensure correct preparation.
* Keeping your section clean and orderly.
* Correctly storing mise-en-place and foodstuffs at all times.
* Proactively ordering produce to ensure effective working supplies.
* Checking daily function sheets and bookings to ensure appropriate production levels.
* Participating in menu planning as appropriate.
* Handling and maintaining all equipment/utensils in the section, liaising with the Maintenance department when necessary.
* Conducting on-the-job training.
* Completing daily handovers accurately and issuing them to all who need the information in a timely manner.
* Adhering to the Hotel’s Health and Safety and Food Hygiene policies.
* Being an ambassador for the Hotel both on and off site.
