About the Role
We are seeking a highly skilled and experienced Second Chef to join our team at Gateway Recovery Centre. As a key member of our catering team, you will play a vital role in delivering high-quality food services to our service users, staff, and visitors.
Key Responsibilities
* Support the Head Chef in the day-to-day running of the kitchen, ensuring smooth operations and maintaining high standards of food quality and safety.
* Maintain good food storage procedures and stock rotation, adhering to established protocols and guidelines.
* Assist in the preparation, planning, and cooking of meals to a consistently high standard, taking into account special requests and dietary requirements.
* Support in food service, including assisting with food preparation, presentation, and plating.
* Prepare and produce food for conferences and banquets, ensuring exceptional presentation and quality.
* Participate in food costings through effective cost control procedures, ensuring efficient use of resources.
* Adhere to 'Safer Food Better Business' standards and record-keeping, maintaining accurate and up-to-date records.
* Adhere strictly to Food Hygiene Regulations and other safety procedures at all times, ensuring a safe working environment.
* Take charge of the department in the Head Chef's absence, ensuring service requirements are met and maintaining high standards.
* Assist the Head Chef in researching and creating new menus, ensuring meals are of high quality and align with healthy eating guidelines.
* Correctly fill all paperwork related to the Hazard Analysis and Critical Control Point system (HACCP), including fridge temperatures, food temperature logs, and cleaning schedules.
Requirements
* Be 18 years or older.
* Hold GCSE or equivalent in English.
* Hold City & Guilds 706/1 and 2 (or equivalent) Basic Food Preparation Cooking.
* Hold Basic Food Hygiene (essential).
* Hold Intermediate Food Hygiene (desirable).
* Have previous experience in a similar environment.
* Have previous experience in delivering a service on mass.
* Have menu planning, costing, ordering, stock control, and budget experience.
