The role of Assistant Food and Beverage Manager at The Macallan Estate works closely with the Food and Beverage Manager to lead an exceptional front of house team. Our team deliver luxury food and beverage experiences to all guests across The Macallan Estate. This include our newly launched restaurant TimeSpirit, Bar, Easter Elchies House, Ghillies House, and private events. A key focus of the role will be to help elevate the wine portfolio on offer in our fine dining restaurant to make it a 5 star experience. The role will assist the F&B Manager in establishing and upholding service standards, ensuring they are consistently met while maintaining awareness of the F&B operating budgets.,
* Assist in developing and implementing F&B Standard Operating Procedures (SOPs) to maintain service excellence
* Support by conducting regular performance reviews, facilitating professional development, and ensuring ongoing training
* Ensure the team consistently delivers exceptional 5-star service in line with SOPs and brand guidelines.Maintain in-depth knowledge of all food and drink menus, ensuring the team is always fully trained and well-informed
* Oversee compliance with legal requirements, including licensing, food hygiene, health & safety, and fire procedures, ensuring adherence at all times
* Undertake the responsibilities of a Bronze Responder following the necessary training
* Attend stakeholder meetings to ensure clear communication of expectations on a daily and weekly basis
* Manage wine stock control and movement, ensuring adherence to proper procedures, conducting stock counts, and investigating discrepancies
* Keep wine lists updated with accurate selections, vintages, and pricing, take ownership of wine stock ordering, ensuring compliance with company policies
* Develop a working knowledge of other departments within the Estate Experience and provide support as needed
* Conduct cashing-up and reporting procedures with accuracy and efficiency
* Lead daily briefings and debriefings with the F&B team
* Collaborate with the head bartender to ensure the serve strategy aligns with brand standards
* Assist with any recruitment processes and facilitate employee career development through continuous career conversations
To be successful in this role, you must have extensive experience in a 5-star hospitality environment in a supervisory or management position, with a background in fine dining and food and beverage service. Experience in cash handling and stock management is essential, and holding a WSET Level 3 qualification or relevant experience with wine is required. Ideally, you have worked as an assistant manager, leading and inspiring a team. As a passionate and effective advocate for The Macallan, you should possess an upbeat and professional manner, leading by example while maintaining strong organisational skills. Excellent communication and customer service abilities are key, along with exceptional attention to detail. Basic IT proficiency, the ability to work under pressure, and confidence in engaging with key stakeholders and senior management are also essential for success in this role.
