In addition to the 36-cover restaurant, we have Clementine’s wine tasting room with 2 Enomatic wine preservation units offering 16 wines by the glass, a secret lounge “The Other Room”, with a fantastic array of single malts, cognacs and champagne. As manager of Chartwell you will be at the fore front of service and your team will deliver an impeccable service from the initial booking through to the post dining follow up, with full knowledge of every dish, classic cocktails and drinks, wine and the service standards to deliver and attain a minimum of 2 rosettes. Main duties and purpose of the role : To work with the Chartwell Manager in running the 36 cover restaurant and Clementines wine tasting room. To be able to describe each dish in our menus confidently Support with Recruitment, training and develop all team members in Chartwell restaurant to 3 rosette level standard with wine training. Proactively promote Chartwell Support with creating and developing the brand standards to keep moving the business forward, making it a destination for the residential and non-residential clientele. To ensure standards of procedure are in place and followed by everyone who works in Chartwell. To ensure all relevant legislation, compliance and procedures in employment law, health and safety, food safety, liquor licencing is followed by all the team at all times. To deliver the experience of fine dining consistently to our guests
