The Head Chef will undertake the operational management and leadership of food production services and kitchen operations in the Academy; the Centre for Food, Drink, and Culture. They will support and guide the kitchen teams and students in consistently delivering quality, variety of food and menus on offer to customers to the agreed standards, whilst ensuring fulfilment of the Academys educational, civic and commercial objectives under the guidance of the Academy Business Manager and the Head of Department of the Department of Hospitality and Tourism Management. - ABOUT YOU - The postholder will be required to have: - A Culinary Arts Degree or a relevant professional chef qualification OR - Extensive and relevant experience as a Head Chef in a food and beverage setting, offering a range of high-end dining experiences including restaurant, and banqueting services.?? - Demonstrable experience in high-end kitchen operations, including personnel management, seasonal menu design, food planning and preparation, sanitation, health codes and security, as well as tracking stock levels of food, supplies, equipment and forecasting needs, with sound knowledge, and awareness of the key issues affecting the hospitality and event sector.
