We are seeking a highly skilled Senior Sous Chef to lead our kitchen team at one of the Isle of Wight’s top summer destinations.
The Offer:
* Salary: £45,000 base (negotiable) + guaranteed £10,000 tronc
* Contract: 9.5 months paid over 12 months (February - December)
* Time Off: Enjoy 2.5 months off from mid-December to February (minimal contact, no work required)
* Accommodation: First 3 months accommodation provided at just £50 per week. After that, assistance finding local housing available.
* Covers:
o March - June: 250 covers/day
o June - September: 500-600 covers/day, 7 days a week
Key Responsibilities:
* Oversee 2-3 sous chefs and a kitchen team of 40-50, including 10 prep chefs.
* Report directly to the Executive Chef
* Work 4-5 double shifts per week, with 2-3 days off during the busy season.
* Contribute creativity to the menu with a focus on fresh, local caught seafood.
* Manage costing, recruitment, suppliers, and other key areas.
