The Role:
As part of our talented Kitchen Team, the Pastry Sous Chef will play a key role in assisting with the management of our pastry section operations. This role requires excellent communication skills, strong attention to detail, and a dedication to maintaining high standards of quality and cleanliness.

Role Specification:
* Assist the Head Pastry Chef in the daily operations of the pastry section, ensuring efficiency and smooth production.
* Collaborate on menu development and contribute new ideas to create exciting dessert options.
* Oversee the preparation, production and presentation of all pastries and desserts, ensuring high-quality standards are met.
* Mentor and supervise junior pastry staff, fostering a positive and educational environment.
* Ensure food safety and hygiene standards are consistently met, met in compliance with health regulations.
* Manage stock levels and inventory for the pastry section, ensuring fresh, highest quality ingredients are used.
* Monitor production during service hours, ensuring timely and efficient delivery.
* Contribute to special events, banquets, and seasonal offerings as required.
Personal Specification:
Essentials
* Passion for creating bespoke, delectable desserts and pastries.
* Proficiency in advanced pastry techniques.
* A keen eye for detail and a drive for visually appealing and innovative desserts.
* Previous experience in a similar role in a high-end restaurant or hotel.
* A commitment to working within a driven team that upholds high standards and quality.
* Knowledge of food safety regulations, pastry ingredients, and modern pastry trends.
* Ability to work in a fast-paced, high-pressure environment, including long hours and extended periods of standing.
Desirables
* Experience handling large volume covers.
* Strong interpersonal and communication skills.
* Food Safety Training.
* Willingness to share knowledge and learn new skills.
* A culinary degree or relevant certification is preferred.
Shift Patterns:
* 45 hours per week
* 5 days out of 7 per week – including weekends, holidays, and evenings.
* Typical shift patterns:
o 08:00 – 17:30
o 13:30 – 23:00
* Note: Full flexibility is essential, as you will be required to work as and when necessary to meet the team and business needs.
