Overview:
This venue will be all about quality and innovation, where the job holder works with the Executive Head Chef and Senior Head Chef of Pastry on menu development and standards to deliver exceptional hospitality experiences.
Key Focus Areas
1. Leads effective and collaborative communication with all key internal and external stakeholders.
2. Ensure we never compromise on quality and flavour through exceptional professional standards.
3. Drive sales, manage volumes and compliance through preferred suppliers and local sourcing where applicable.
4. Deliver client tasting sessions for event planning.
5. People management across multiple hospitality kitchens.
6. Legislative and company HSE procedures compliance.
7. Assist in managing and controlling labour costs.
8. Take full responsibility for the technical training during the onboarding phase of new recruits.
9. Produce high-end restaurant quality desserts for all match day hospitality areas and events.
10. Assume control of the pastry department, ensuring safety, quality, quantity and appearance standards are met.
11. Supervise and direct all chefs working in the pastry section.

3. Proven track record in high quality environments.
4. Able to illustrate how you keep pace with food trends.
5. Commercially minded with evidence of managing costs.
6. Hands-on approach.
7. Supervise the delivery of food service provision.
8. Provide the highest level of customer service.
9. Plan food production and process orders.
10. Check invoices and delivery notes.
11. Supervise the receipt and quality of commodities.
12. Ensure recovery and storage of food is followed.
13. Follow all recipes for compliance of nutritional/dietary requirements.
14. Assist with coaching and mentoring Apprentice/Trainee Chefs.
15. Attend Craft Forums and share knowledge.
16. Follow all waste control procedures.
17. Assist with the preparation of hospitality menu costs.
18. Be flexible and comply with reasonable requests.
19. IT literate.
20. Experience within a similar role.
21. City and Guilds 706/2 or NVQ level 3 or equivalent pastry qualification.
22. Knowledge of supervising or managing people.
23. Intermediate Food Hygiene/level 2.
