Key Responsibilities
* Developing and implementing culinary standards that align with corporate strategy and the hotel's visions and goals
* Recruiting, training, mentoring and managing the culinary team, fostering a positive and collaborative work environment
* Working with the Service team to create bespoke menus and memorable culinary experiences
* Conducting new menu tastings for Front of House and Management team
* Ensuring all dishes have standardised recipes with costing, technical sheets and allergen sheets
* Leading the operation and monitoring guests' experience and associates' performance
* Ensuring HACCP reports are always up to date
* Collaborating with all departments to ensure a seamless and exceptional dining experience
* Ensuring the highest standards of food quality, preparation and presentation are consistently met
* Joining regular kitchen inspections and audits, focused on hygiene and health and safety standards
Key Skills, Qualities & Experience
* Proven experience as a Chef de Cuisine or Senior Sous Chef in a high-end Pan Asian/Modern British restaurant
* Possess a minimum of 3 years experience in a similar role
* Be people-focused with solid leadership and training skills
* Demonstrate Grantley Hall's core values and truly be able to share and express your passion for your industry
* Able to understand food costs and the ability to cost out dishes
* Have good communication skills with people at all levels and be able to communicate with clients for event planning
* Up to date knowledge of all levels of HACCP and kitchen management
