Opportunity Overview The University of Salford are looking for an exceptionally talented Baker to take up the mantle of leading & growing the Universitys sourdough-based artisan bakery (located within the Old Fire Station) and in the innovation and development of new products using healthy, sustainable produced/sourced ingredients whilst working alongside our students and academics. This is a key opportunity to create more than a business and bakery, it is the opportunity to make a difference to the local community and influence the lives of students through research, wellbeing, training and employment skills. We seek an individual who can lead the innovation and development of new and exciting products as well as drive the highest quality and work collaboratively with a jointly located brewery and colleagues across the University. The successful candidate must therefore be a proven, proficient and imaginative baker who can also manage the development of the bakery, manage a team and professionally work with a range of stakeholders. They must have passion and inventiveness as key elements of their core baking and management skill set. You must be willing and able to work with and handle all types of food including, but not limited to, dairy, meat, and pork-based products, and be able to taste all products to ensure quality. Key Responsibilities All aspects of production and product development are covered by this role. With a strong foundation of sourdough baking, you will be responsible for creating new recipes that are both cutting edge, environmentally aware, exciting and commercially successful is key, along with the development of brands and customer/consumer and stakeholder relationships. You will be the figurehead for the Bakery. Production management includes all aspects of the operation: Raw material selection, sourcing, and ongoing ordering Production planning, cost-effective pricing, and the supply of the required products on time All aspects of production Driving forward the quality standards including developing and maintaining quality control Developing a collaborative working environment within the Bakery and with the Head Brewer and Operations Manager. The Old Fire Station Located in a Grade II listed building at the centre of the evolving Salford Cultural Quarter, The Old Fire Station is an independent coffee shop, bakery, café, and bar. At the heart of the venue is our Bakery, producing high-quality artisan breads and pastries. Co-located with the bakery, café & bar is Lark Hill Brewery, the Universitys own micro-brewery producing speciality beers. The Old Fire Station Bakery has developed a reputation for fresh, tasty, artisan sourdough bread, delicious pastries and desserts including croissants, pain-au-chocolat, cheesecakes, and tarts, all made with organic, heritage ingredients, and baked fresh daily. The Old Fire Station is owned and operated by the University of Salford and serves University staff, students and, importantly, our local community, attracting customers from around the region.
