Designed by Rémi Tessier and featuring artworks by Damien Hirst, abc kitchens at The Emory brings chef Jean-Georges Vongerichten’s acclaimed abc brand to the UK for the very first time. Vibrant, approachable and contemporary, the restaurant’s glass facade promises views of Hyde Park and Kensington, while the menu brings together delicious elements from a trio of Jean-Georges’ New York locations — abc kitchen, abcV and abc cocina. Main Duties & Responsibilities As a Pastry Demi Chef de Partie you will prepare all menu items of pastes and pastry within abc kitchens and The Emory, ensuring that the highest standards are maintained at all times. Main responsibilities of the role include but are not limited to: Assist in the production of food and service within the Pastry. Supervise commis chefs, apprentices and trainees within your section, making sure that they are properly dressed to the standards set by the Executive Chef. Maintaining discipline in a fair and consistent manner, including timekeeping, reporting breaches to the Chef de Partie / Sous Chef. Ensure correct procedures are use particularly in the preparation of high risk foods. Ensure that the appropriate amount of mise en place is kept in stock. Follow abc kitchens and The Emory standards of service and delivery, maintaining budget goals, LQA and Forbes standards.
