Salary: £27,000 per annum, subject to experience

Hours:Full-time (37.5 hours)5 days out of 7 to include weekends, and some out of hours and evenings as required.

About Aberglasney:
Aberglasney was rescued from ruin in the mid 1990s whereupon a huge restoration project shaped what we see today and it now runs as a charity, Aberglasney Restoration Trust. It is one of Wales finest gardens providing a unique visitor experience including a Grade 2 listed mansion, holiday cottages, gift shop and tearooms, and a guided visitor experience. Rooms are available for teaching and learning activities, and for hire by the community and private functions. Aberglasney needs to continue to generate a variety of mixed income streams to ensure that the future of the gardens, mansion house and other buildings are sustained and are commercially viable. The tearooms are an integral part of visiting the garden ensuring our visitors, members and supporters have an enjoyable and memorable visit.
You will beresponsible for overseeing the daily operations of the tearooms, including managing staff, ensuring excellent customer service, maintaining inventories, monitoring finances, organising events and upholding food safety standards, while actively working to optimize profitability and customer satisfaction. The position requires strong leadership and excellent communication and organizational skills.

Key Activities and Responsibilities:
* Responsible for inspiring and leading a team of staff to deliver a high-quality food and drink experience to customers.
* Responsible for the day-to-day business performance of the tearooms.
* Assist with the analysis and planning of the tearooms sales and profitability including marketing, promotions, and events.
* Prepare management information at the end of shift/week/month including staff control, food control and sales.
* In conjunction with the other staff and members of the management teamplan and co-ordinate menus, budgets, events and business plans.
* Ensure that there are adequate staff on duty, with the necessary skills and training, to allow for the tea rooms to always run efficiently.
* To be prepared to assist with the preparation, cooking and serving of food complying with policies and legislation in relation to quality, quantity, food hygiene and portion control within the tearooms.
* Responsible for ensuring that dish specifications are maintained, and food margins achieved for the tearooms.
* In the absence of other staff or when the tearooms are busy assist with other duties as required.
* Responsible for stock management and control including ordering supplies, stock rotation and waste management. Responsible for stocktakes in accordance with policy.
* Ensure that all the necessary records are maintained (manual and computerised) and available for internal and external audits e.g., EHO, Trading Standards, Health & Safety etc.
* Responsible for the highest standards of food hygiene and food safety within the tearooms.
* Responsible for HACCP and ensuring that staff at all levels have the required standard of training.
* Responsible for the recruitment and management of staff area, including discipline, performance management, training and development in conjunction with the Gardens Director.
* Responsible for regular communication with all staff.
* Ensure that the staff food policy is followed with no unauthorised food leaving the kitchen.
* Instil a clean as you go regime within the tea rooms and food preparation areas.
* Ensure that all kitchen equipment particularly fridges, freezers and other similar appliances are working efficiently and to manufacturers specifications and food safety standards.
* Ensure that all staff wear kitchen uniform and PPE where appropriate.
* Always observe business etiquette and confidentiality, responding promptly and professionally to any customer feedback, comments or complaints.
* Always observe company procedures and protocols.
* The job holder will attend training courses, relevant meetings and other team events as required.
* The job holder will carry out such other reasonable tasks that may from time to time be allocated.
Previous Experience and Skills
ESSENTIAL:
* Experience as a manager within a hospitality environment, demonstrating skills in organising events, staff management and the ability to motivate a team.
* Experience in cooking and preparing quality food, displaying a passion for food and customer service.
* Cash management experience.
* Sales orientated with a target driven ability to maximize sales opportunities.
* A confident communicator with strong interpersonal and customer service skills demonstrating ability to engage with a diverse range of customers and audiences.
* Ability to plan and forecast orders, familiar with budgets, increasing income and controlling costs (including managing stock and waste).
* Maintains a calm professional manner when under pressure, be comfortable working independently and using own initiative.
* Level 2 Food Safety Certificate.
* A good understanding of current health and safety guidelines.
* Good time management skills and an ability to plan and work flexibly in different situations.
* Understanding and respect for the principles of confidentiality and equal opportunities.
DESIRABLE:
* Qualifications in Food Safety, Management or Catering.
* Food Hygiene Level 3 Certificate.
* First Aid Certificate.
Person Specification
QUALIFICATIONS:
* Qualification in a relevant area or equivalent experience.
* At least 2 years experience in a similar role and a passion for high quality food and drink.
KNOWLEDGE AND SKILLS:
* Computer literate and a knowledge of GDPR.
* Good interpersonal skills, demonstrating ability to work as part of a team and customer service skills, e.g. managing conflict / complaints and problem-solving skills.
* Experience of staff management, commercial awareness and health and safety standards.
* Demonstrates an ability to plan and organise promotional, business and social events.
* Cash management experience, budgeting and financial forecasting.
PERSONAL ATTRIBUTES:
