General Function:
Under the supervision of the Resident Camp Director and in harmony with the mission and purpose of the established policies and goals of the YMCA of the Virginia Peninsula, the Camp Cook is responsible for providing meals for campers and staff during the summer camp program by directing the overall food-service operation of the camp including purchasing, preparation, nutrition, service, sanitation, security, personnel management, customer service, and record keeping.
Qualifications:
* Experience in institutional or large food service setting.
* Experience in cooking and serving over 100 meals per day.
* Knowledge of and experience in food service: ordering, inventory, budgeting, food preparation, family-style serving, buffet serving, cleaning, and institutional kitchen equipment.
* Must hold current ServSafe Certification / Food Safe and Equipment Certified.
* Ability to work with Camp Director on budget and purchase supplies efficiently.
* Certification in CPR/First Aid/AED/O2 required within 60 days of hire.
* Complete and maintain required trainings to include: New Employee Orientation (NEO), Bloodborne Pathogens, Child Abuse Prevention (CAP), and Sexual Harassment.
* Satisfactory completion of a criminal background check and Child Protective Services check.
Essential Functions:
* Manage the daily operations of the camp food and dining service.
* Oversee the planning and preparation of nutritionally balanced camp meals Sunday night dinner to Friday breakfast for up to 75 people per meal.
* Ensure the service of camp meals through directing the work of other staff and volunteers.
* Ensure safe and efficient preparation and serving of camp meals.
* Follow state health department regulations pertaining to safe food practice and work with food inspectors to ensure legal compliance.
* Coordinate menu planning for outside groups as directed.
* Oversee the inventory and ordering of food, equipment, and supplies and arrange for the routine maintenance, sanitation, and upkeep of the camp kitchen, its equipment, and facilities.
* Maintain inventory of food and household supplies.
* Order food and kitchen supplies consistent with menus and enrollment counts.
* Maintain high standards of cleanliness, sanitation, and safety.
* Clean and maintain all food-service areas, including kitchen, dining hall, storage, kitchen recycling.
* Inspect equipment and work with facility director to ensure equipment is repaired as necessary.
* Promote practices that seek to reduce waste, reuse items, and recycle as much as possible.
* Support the mission, vision and goals of the YMCA.
* Promote a professional work environment through character development by modeling the values of caring, honesty, respect and responsibility.
* Wear staff uniform and name tag, or professional attire when appropriate.
* Attend staff meetings and trainings as scheduled.
* Act as a leader in emergency situations. Report any accidents or incidents according to Emergency Communication Action Plan.
* Follow mandated child abuse reporting requirements.
* Ensure all members, guests, and program participants are in a safe environment and actively follow branch Emergency Operations Plan (EOP).
* Carry out other related duties as deemed necessary by camp operations to ensure an excellent participant experience.
Skills and Ability Requirements:
* Knowledge of current health and safety laws and practices is essential.
* Knowledge of standards of food preparation and serving, storage of food, and kitchen procedures.
* Knowledge of food allergies and food related diseases, and the ingredients that may cause the allergy/disease.
* Ability to effectively communicate orally and in writing.
* Ability to read, analyze and interpret documents.
* Ability to identify and respond to environmental and other hazards of the site and facilities and camper and staff behavior.
* Ability to safely and properly use kitchen equipment.
* Physical ability to lift and carry 50 pounds.
* Physical mobility and endurance to perform tasks while standing/walking for long periods of time.
