Use an eye for quality to produce high quality items from fresh ingredients, whilst directing the junior kitchen team where needed. Have a full operational knowledge of all recipes, standards and presentation style of dishes produced within the designated section. Work with high quality fresh produce and organic ingredients as menus dictate. Provide a consistently high level of service and product delivery. Manage a section within the kitchen, maintaining standards and menu specification. Develop and create seasonal dishes using fresh produce where ever possible. Work closely with junior members of the kitchen and Sous Chef. Co-ordinate, participate and supervise production, preparation and presentation of meals. Work at an efficient pace to ensure service levels are maintained at all times. Observe and meticulously follow regulations on food storage, hygiene and temperature control.
