Key Accountabilities & Responsibilities
Financial delivery and control
Fully accountable for combined food and beverage revenue.
Responsible for controlling all variable cost lines including all non-consumable goods, energy, accessories etc.
Ensure all weekly paperwork and invoices are filed and available for collection to the accountants.
Measures of success: managers performance set against the P & L.
Food & Beverage offering, service standards
Fully accountable for the full Beverage offering, ensuring the offering exceeds Tom’s expectations.
Ensuring the highest standards of service are being achieved at all times.
Fully accountable for the monthly wet stock takes, including GP and stock holding levels.
Supporting the Head Chef and Tom in delivering an exceptional Food offering.
Measures of success: Increasing Michelin star rating and maintaining 5 AA Rosette’s, observations & guest feedback.
Team Building, development and retention
Responsible for recruitment of all FOH staff.
Responsible for ensuring quality inductions and training plans for all new staff including preparation and signing of contracts and H&S and Food policies.
Responsible for the training & development of all FOH & back of house staff covering product knowledge and service standards.
Responsible for keeping staff motivated, engaged and feeling part of the team.
Responsible for managing in house job descriptions, measuring performance against KPI’s, holding twice yearly appraisals with all team members.
Responsible for addressing issues of under-performance in a timely and professional manner, working with the Operations Director as required.
Measures of success: Staff turnover %, staff feedback, team members development.
Site Maintenance, Cleanliness & security
Responsible for ensuring site is maintained to the highest standards in all areas of the building.
Responsible for actioning maintenance issues as soon as they arise and relaying to Operations Director when needed.
Responsible for the safety of staff and the security of the premises.
Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all the areas of the venue.
Responsible for ensuring daily, weekly and monthly checks are adhered to and all checklists completed during current shift.
Measures of success: Site audit scores, customer feedback, EHO reports.
Health and Safety
Ensure that in every element of the business that we comply with current legislation.
Ensure all H&S checklists are completed fully and accurately at all times.
Ensure Food Alert Portal is fully compliant and monitored.
Responsible for making sure that any member of your management team would be comfortable dealing with any inspection by the EHO, Fire Officers or Police.
Measures of success: EHO visits & scores, fire officer visits, Shield Yourself Audits & scores & staff training records.
Organising events & future planning
Responsible for managing all reservations ensuring maximum occupancy levels are strived for at all times.
Responsible for converting private event enquiries into confirmed reservations.
Ensuring the smooth running of all events and generating repeat corporate business.
Remain up to date with industry sector developments and trends.
Responsible for ensuring the website menu content is always relevant and up to date.
Measures of success: Feedback from Head of Marketing, ongoing review of site social media activity.
Communication
Responsible for attending weekly meetings with Operations Director.
Ensuring all reservations receive professional and welcoming communication.
Responding to any negative feedback as a matter of priority and turning the situation around into a positive one.
Responsible for holding own weekly site management team meetings.
Responsible for ensuring all information as relevant to junior team members is cascaded to team via all channels available (noticeboards, verbally, social media etc).
Measures of success: Meeting attendance and meeting minutes.
Other Duties
Duty Management; open and close the premises following management checklists.
Site ambience; ensure the customer area has the perfect atmosphere at all times from lighting & music to heating and happy smiley engaging staff.
Ensuring all menus and stories are up to date and accurate for every service.
Cash Management; ensure safe handling of cash at all times yourself and from team members following the company guidelines.
Efficient delegation to your management team and on-going monitoring of their performance.
