Concept:
Mareida has been founded by Prenay Agarwal to showcase Chilean cuisine in London following his time spent in the country and his love and passion for the food there. To that end, we are bringing in Head Chef Trinidad Vial Della Maggiora to lead the kitchen who is, in turn supported by Chef Carolina Bazan. Bazan is very well known and respected having been voted Latin Americas Best Female Chef in 2019 by the Worlds 50 Best.
The food is intended to showcase dishes from coast to the mountains and the menu may well include some of the dishes that proved most popular at the Carousel residency last year such as lamb corn cake alongside grilled sea bar with quinoa, avocado, pebre and chilli.
The wine list will be put together by sommelier Rosario Onetto and will have a distinct Chilean focus. It will reflect the diversity of the wine regions in the country, from the Noth in Atacama down to the South.
Role:
As Restaurant Manager it will be your responsibility to lead the FOH team to deliver a seamless and warm experience for our customers. You will also support the General Manager as needed. You will lead on team training to ensure that everyone knows the food, wine and drinks menus, can deliver the sequence of service consistently with passion and interest and that the team are supported and nurtured.
Requirements:
-Minimum 1 year as a Restaurant Manager and 3 years in hospitality
-Strong focus on positive team culture and training
-Ability to manage the rota's effectively
-IT competent (MS Office, EPOS, Reservations, and all other systems)
-Excellent guest service skills
