The 1936 Pub Company are looking for an experienced chef to step into our senior relief chef position. We currently operate five kitchens across Liverpool - Papillon, Love & Rockets, The Old Schoolhouse, The Bookbinder, and Metrocola. The relief head chef will provide guidance, leadership, and cover for these restaurants during their busy periods and in the absence of head and sous chefs. A key element of this role is the differing venues, atmosphere, and styles of service; working with new teams, new talent, and in different sites weekly, with the potential to progress into positions across our group with a lot of creativity and contribution to concepts. It is because of this we require a highly skilled, experienced, and flexible chef for this position. Full time contract 45-48 hours per week Paid weekly (as well as TRONC payments) The Job: - Work and lead shifts in whichever kitchen is needed, including extended periods of time. - Complete head chef tasks whilst in kitchens and in the absence of the head chef; ensuring staffing levels are correct, prep levels are to par, food standards are to company spec. - Help manage and adhere to allergen matrixes, Safer Food, Better Business booklets, fridge temperature documentation, and all EHO procedures. -Guarantee the preparation and presentation of all food is the highest standard and complies with food safety regulations including COSHH and HACCP. - Complete stock orders where necessary, adhering to venue par levels and bookings. -Maintain a professional, positive working relationship with the food service team. - Opening and closing procedures in the kitchens - completion of Trail, date labels, FIFO procedures. -Report and find solutions for maintenance issues relating to kitchen equipment and facilities; source replacements and sign off costs with the operations team. - Compile a weekly report to be sent every week to the operations team detailing shifts, tasks completed, plan for the following week, and general site, staff, and service feedback. Weekly TRONC payments Fully paid company staff nights out Overtime opportunities Experience & Characteristics Required - Senior Sous chef experience in a high volume, award-winning restaurant and bar group. - Self-driven and motivated. - Highly organised in back of house processes. - Clean, efficient kitchen processes. - A keen eye of trends. - Driving license is preferable due to the nature of the role/sites.
