A unique opportunity has arisen at Pennyhill Park. We are actively seeking a Restaurant Manager to lead our Michelin star restaurant, the Latymer.
Latymer - Pennyhill Park’s fine dining restaurant offers bold flavors with locally sourced ingredients inspired by the seasons. Awarded a Michelin star in 2021 and 5AA Rosettes, it features exquisite tasting menus for dinner.
Head Chef Steve Smith is renowned as one of the most inventive chefs of his generation, known for modern British cuisine using the finest seasonal ingredients. He has held a Michelin star for over twenty years, earned Five AA Rosettes, an 8/10 in the Waitrose Good Food Guide, and a Catey Award for Chef of the Year in 2014.
Role Responsibility

As the Latymer Restaurant Manager, you will be expected to:
* Lead by example regarding service standards for a Michelin Star restaurant
* Deliver a warm and welcoming experience for all guests
* Work with the team to exceed guest expectations in all areas of service
* Possess outstanding knowledge of food, wines, cooking techniques, and allergy requirements
* Have a strong understanding of restaurant service styles
* Oversee shifts, remain hands-on, and motivate the team
* Ensure the restaurant maintains high standards of presentation, cleanliness, and hygiene
* Manage stock ordering and control to ensure availability
* Help manage back-of-house areas including cleanliness and wastage control
* Maintain strong relationships with the kitchen team
* Train and mentor front-of-house staff
* Work with the Head Chef to develop the business and optimize sales
* Carry out Duty Management shifts as required

* A passion for food and beverage
* Experience in a 5* luxury or Michelin-starred restaurant or hotel
* Strong communication skills
* Exceptional organizational skills
* Strong knowledge of ingredients, cooking methods, and dietary requirements
* A drive to create memorable guest experiences
* The ability to work under pressure in a busy luxury environment
* WSET Level 3 qualification is an advantage
