About the role
As a Casual Cook at Copelands, you will share responsibility with the Head Chef delivering a high-quality dining service to residents that offers a creative menu that meets residents’ nutritional and dietary requirements and offers choice.
SO, WHAT WILL YOU BE DOING?
1. You will provide a menu offering choice, seasonality, creativity, presentation and, above all, a food offering that is nutritious and high on quality.
2. You will deliver home baking for our residents.
3. You will manage service times, providing a range of choice for breakfast, lunch and dinner to suit all palates and dietary requirements.
4. You will manage the kitchen to a high standard ensuring compliance in terms of hygiene and quality with specific responsibility in maintaining external standards/regulations (e.g. environmental health; NI Code of Practice (Food Law); HACCP; Belfast Central Mission’s policy & procedure on Health & Safety).
5. You will manage the kitchen to budget, taking into account stock control, portion control, and minimisation of wastage.
6. You will manage a staff team ensuring that they are fully aware of kitchen procedure in terms of hygiene, quality, stock storage & rotation, and cross-contamination.
7. You will ensure that a robust records management system is in place (e.g. temperature, cleaning rota, stock, use by dates etc.).
8. On occasion, you may be required to serve food to residents.
Essential Criteria
1. Experience: 2-years’ experience of working in a busy kitchen (delivering 50+ covers) with responsibility for setting menus, purchasing, and stock control.
2. Qualifications: CIEH Level 3 in Food Safety or equivalent.
3. Skills: Demonstrable experience in managing a budget, managing a staff team, and managing compliance.
