What You’ll Be Doing Culinary Leadership & Strategy Lead the culinary direction across the hotel, ensuring exceptional dining experiences that align with the brand vision. Oversee menu development, food presentation, and overall kitchen innovation. Implement seasonal and locally inspired menus that reflect Edinburgh’s vibrant food scene while maintaining consistency with brand standards. Ensure all food offerings exceed guest expectations in quality, taste, and presentation. Develop and execute strategic plans to maximise food revenue while maintaining cost efficiencies. Operational Excellence & Financial Management Oversee all aspects of kitchen operations, ensuring efficiency, cost-effectiveness, and compliance with RBH financial policies. Manage food costs, stock control, and supplier negotiations to achieve budgeted targets. Analyse financial performance, ensuring kitchen profitability through effective labour and cost management. Work closely with the General Managers and Food & Beverage teams to enhance dining concepts and offerings. Ensure compliance with all health, safety, and food hygiene regulations. Maintain and improve kitchen efficiency by implementing best practices in workflow and operational procedures. Innovation & Guest Experience Lead the creative direction of menus, embracing innovation and emerging food trends. Develop signature dishes and experiences that set the properties apart from competitors. Implement sustainability initiatives, reducing food waste and promoting environmentally friendly practices. Work with suppliers and local producers to source high-quality, seasonal ingredients. Maintain high service standards, ensuring consistency in all aspects of food preparation and presentation. Team Leadership & Development Recruit, mentor, and develop a talented kitchen team, fostering a culture of excellence and teamwork. Provide ongoing training and development opportunities for chefs at all levels. Implement clear career progression pathways to retain and nurture top culinary talent. Conduct regular team briefings and tastings to ensure consistency and knowledge of menu items. Promote a culture of learning and creativity in the kitchen, encouraging chefs to develop their skills and contribute ideas.
