THE ROLE The Clan Cafe Chef Manager oversees food standards and consistency across three on-site clan cafes. They are responsible for preparing nutritious, balanced, and high-quality meals for our hotel team members. The ideal candidate will possess excellent cooking skills, strong organisational abilities, and a passion for ensuring our staff receive great meals that support their well-being and performance. You’ll also be expected to deliver on the following: Meal Preparation: Prepare and cook a variety of meals, catering to diverse dietary needs and preferences, ensuring a high standard of food quality, taste, and presentation. Menu Planning: Work with the kitchen team to plan nutritious, cost-effective, and seasonal menus that meet the dietary requirements of hotel team members. Health & Safety: Maintain a clean and organised kitchen environment, following strict hygiene practices and health and safety regulations. Ensure that food preparation, storage, and serving comply with food safety standards. Stock Management: Monitor and manage stock levels, order supplies as necessary, and keep track of inventory to minimize waste while maintaining quality. Team Collaboration: Collaborate with other kitchen staff, the Head Chef, and Hotel Management to ensure smooth service during busy times and that meal times run efficiently. Dietary Needs Accommodation: Ensure all meals are prepared according to individual dietary requirements (e.g., vegetarian, gluten-free, vegan, etc.) and work closely with the team to accommodate special requests. Waste Reduction: Assist in minimizing food waste by using ingredients efficiently and implementing proper storage methods. Shift Coordination: Ensure that meals are prepared and served on time during designated team meal breaks, and be flexible in supporting different shift schedules. Staff Training & Mentorship: Occasionally assist in training new kitchen staff or interns, providing guidance on meal prep, safety procedures, and overall kitchen operations. Cleanliness and Organisation: Responsible for ensuring that our clan cafes and surrounding areas are kept clean, organised, and tidy at all times. Adhere to proper cleaning schedules and ensure work areas meet the highest hygiene standards. Qualifications & Experience: Proven experience as a Chef, Cook, or in a similar catering role, ideally in a hotel or large-scale kitchen environment. Formal culinary training or certification is preferred. Knowledge of various cuisines, dietary requirements, and nutrition is highly beneficial. Experience in managing kitchen operations, including stock control, food safety, and menu planning. Ability to work efficiently in a fast-paced environment and maintain high standards under pressure.
