Chocolatier Sous Chef:
We are seeking a talented Chocolatier Pastry Sous Chef to join our dynamic team at our expertly equipped production kitchen in Brentford. As a key kitchen member, you will be responsible for producing exquisite chocolate and pastry products using innovative techniques, and health-conscious, high quality ingredients. Your creativity and passion will be essential as we explore new flavours, textures, and methods to offer our customers an elevated, healthier alternative to traditional confections and pastries.
Location: Brentford - West London
Salary: £40,000 per annum
Hours:48 Hours Per Week, Day Shift, Early Start

Key Responsibilities:
* Collaborate with our Executive Chef to craft and develop a diverse range of premium chocolates and pastrieswith a key focus onhealthier ingredients(e.g., using unrefined clean sugars, natural alternative sweeteners, gluten-free, dairy-free, paleo ingredients) for our retail shop in Chelsea.
* Consistently and excellently meet production deliverables and deadlines.
* Maintain a clean and organised work environmentby following proper kitchen protocols for cleanliness, food storage, and safety.
* Ensure all products are prepared to the highest quality and presentation standards.
* Maintain a clean and organised workstationand adhere to strict food safety and hygiene regulations.
* Experiment with new recipes and techniques, bringing fresh ideas to the kitchen and pushing the boundaries of traditional pastry and chocolate work.
* Manage inventory levels of ingredients and suppliesensuring that the kitchen is stocked and organised.
* Assist insourcing, supplier management, ordering, receiving and inventory rotation.
* Assist in setting and maintaining kitchen budgets.
* Assist in monitoring food costs, waste and other costs.
* Assist in developing training materials and SOPs.
* Train and mentor junior pastry staffin all processes, fostering a positive and productive kitchen environment through hands-on leadership.
* Stay current with industry trends, attending workshops, trade events, and researching innovative techniques that could be incorporated into our products.
* Maintains a strong understanding of company background, core values and philosophy.
Requirements:
* Proven experience as a Chocolatier or Pastry Chef, ideally within a high-end or artisanal chocolate/pastry business.
* Strong knowledge of healthy food trends and bonus if experience working with healthier ingredients (e.g., alternative sweeteners, low-sugar, paleo, gluten-free, dairy-free options).
* Experience in mentoring or training junior staff.
* Experience in production, mise en place, shop or boutique.
* Rigour and attention to detail, maintaining high standards of quality and excellence.
* Team-focused mindset and emphatic approach to collaboration.
* Ability to receive and process feedback with an open mindset, and to make constructive adjustments in a professional manner.
* Excellent communication, organisational and interpersonal skills, with the ability to handle a fast-paced environment.
