Job Title: Chef de Partie
Reports to: Head Chef
Direct Reports: Commis Chefs, Kitchen Porters
Area of Business: Wine Inns
Responsibilities
1. Manage the general day-to-day running of your section within the Kitchen.
2. Manage cost and quality control for both incoming and outgoing goods.
3. Ensure that goods are stored in the correct conditions and that stock rotation is carried out correctly.
4. Maintain the hygiene of the kitchen at all times.
5. Be aware of costs and wastage.
6. Ensure temperature readings are taken daily and documented, and that hygiene procedures are followed.
7. Maintain a high standard of personal hygiene and appearance at all times.
8. Assist in the training and development of junior team members.
9. Perform any other duties relevant and related to the post.
Educational Qualifications
1. NVQ Level 2 in Food Preparation and Cooking or equivalent qualification (essential).
2. Food Safety Level 1 Certificate (essential).
Skills and Experience
1. Minimum 1 year experience in a busy kitchen environment, with knowledge of all sections and experience in different styles of cooking.
2. Good knowledge of EHO regulations, due diligence, temperature checking, and record keeping in line with health regulations.
3. Able to work well in a team.
