As a Senior Pastry Chef, you will play a pivotal role in crafting extraordinary dishes that delight our discerning members and guests. The Role: As the Senior Pastry Chef at Phyllis Court Club you will be part of a fresh food led kitchen environment achieving high standards of culinary expectation for our members. This role provides an opportunity to create an exceptional dining experience within our busy and vibrant kitchens, using fresh and seasonal produce. Your responsibilities as a Senior Pastry Chef To assist the Head Chef in increasing the quality of the food operation in pastry section. Creating new ideas for menus. Working closely with the Head Chef on menus across the entire estate, tasting preparation and execution with the Head Chef to help win future business. To develop new catering ideas and putting them into production for the pastry team to execute. Keen monitoring that the quality of the food in all areas of the pastry kitchen are to the standards of the kitchen during all stages of production. To bring in house a better % of freshly made products. To coordinate with the Head chef tastings with the kitchen team so new training and re training can be given. To participate and action with the Head Chef the company’s Food Safety management system (FOOD ALERT). To maintain high levels of hygiene and health and safety. To be part responsible for the development of the juniors in the pastry team with clear goals of what they are needed to perform on daily basis conforming to all the legislation. To co-write all menus with the Head Chef for the operation, based on the business needs. To understand and control stock control and purchasing for the kitchens ensuring wastage is controlled. To ensure that all food is stored in the correct manner and that stock rotation is properly carried out. To create applicable dietary and allergen information sheets of all menus where needed and attend regular briefings of the front of house teams to make sure the tastings and trainings within them is being attained and that the staff understand the menus and dietary s that come with it. To report any abuse of Club property to the Head Chef or Management. To help train the kitchen staff with the skills required so that they can complete their job efficiently and safely. To be aware of Health and Safety at Work and Hygiene regulations and report any irregularities to the Head Chef. To report all accidents to Head Chef or Duty Manager. To ensure good working relationships with kitchen personnel and all other departments within the Club setting an example to others. To adhere to the fire procedures as laid down by the Club. To carry out any reasonable tasks set by Management. To participate in the department meetings. Weekly meetings with the Head chef to gather and organize all working operations. Essential Requirements of a Senior Pastry Chef Passionate about working in hospitality. Previous experience working in a pastry kitchen environment Great eye for detail and take pride in delivering beautiful and tasty food. Be organised and able to work under pressure. Team player essential with a flexible and adaptable approach to work. High level of professionalism. Good personnel hygiene. Good communicator. Right to work in the UK. Desirable Previous experience in a private members Club or similar environment. Experience in fine dining.
