The role of Chef De Partie is to support the Head Chef in running various stations of a busy new kitchen in a 110 cover new restaurant concept. The food style is very high quality freshly prepared small plates with a Mexican inspiration. Food is served family style, and is cooked/served fresh to order with plates going to tables as they are ready with a quick turnaround, based on daily preparation in advance. You must be able to run a line/section, either grill/cook/fry or cold in a new restaurant setting and concept, and ensure that the highest standards are met for food preparation and service, including running a tight kitchen with all the latest technologies to aid efficiency. The role will be perfecting the preparation of food on your line ensuring efficiency and good team working. This will be a fast paced kitchen with high standards, so you must be prepared for this style of kitchen. Some kitchen experience is required, but for those with less experience, a commis role maybe offered initially. Experience of similar small plate service would be advantageous but not essential. Total salary package to include Tronc £30,000-£35,000 pa depending on experience. Applications are welcomed from all levels of experience, and part time applications will also be welcomed.
