GENERAL MANAGER, BEACHSIDE, FOLKESTONE

The Rocksalt Group are currently recruiting for a General Manager to oversee our Beachside project within the wider Folkestone Harbour Arm development. The role will include the managing of both Little Rock restaurant and The Pilot Beach Bar. We are looking for a hardworking, creative and charismatic industry professional, with a proven track record of success in high end hospitality operations. You will be responsible for the smooth day to day running of the business, with full accountability for the performance of both sites. The candidate will be expected to bring fresh, new and exciting ideas to the team. Little Rock is our newest opening and sits beachside just off the station platform on Folkestone’s Harbour Arm. Housed within a shipping container, Little Rock is a dedicated fish restaurant, serving fresh, local and seasonal fish and seafood caught around the surrounding coastline. Little Rock was included in The Good Food Guide for 2024. Its sister site next door, The Pilot, serves a wide range of creative drinks for people to enjoy an eclectic and nostalgic beach side setting, complemented by a cocktail and Mr Whippy fairground hut and beach BBQ’s in the Summer.
Established in 2011, The Rocksalt Group is an independently owned and award winning group of restaurants and pubs located across the South Coast of Kent. The operation includes flagship restaurant Rocksalt. The Rocksalt Group also owns a group of highly regarded pubs under The Pickled Egg Pub Company.
Due to the seasonal nature of the business, the 45 hour work week is based as an average across the year. The successful candidate will be expected to work up to 55 hours in peak Summer but then reduced down to 35 hours in low season while still on the same monthly take home.
Key Responsibilities:
* Management of both sites' rota, adhering to the seasonal needs of the business and recruiting when necessary. Rota's will be based on predetermined budgets from head office, working towards a staff GP target.
* Wet stock ordering for both venues, working towards a target drink GP and wastage allowance.
* Overseeing and managing all health and safety procedures and due diligence alongside the site's Head Chef.
* Working with the marketing manager to promote the venues successfully, providing suggestions on how to increase footfall and customer spend throughout the year.
* Full responsibility alongside the Head Chef for the successful financial performance and customer satisfaction of the businesses.
